Summary
Responsible for all activities on the assigned shift related to the operation of the Smokehouse Department.
Essential Duties & Responsibilities
The essential duties for this job include the following, but other duties may be assigned.
- Provide direction to assigned employees as necessary to insure the proper cooking of the meat product being made.
- Prepare Smokehouses, calibration and ensure cleanliness
- Determine if the kitchen is running the correct product according to the packaging schedule.
- Make certain that the smokehouses are working according to the specifications required for each product line.
- Maintain a record of product runs to determine compliance with established standard.
- Determine the proper order for product to be packaged.
- Basic computer skills used for running houses
